2 each egg -- separated
1 each banana -- ripe
1 tablespoon banana liqueur
1/3 cup
beer
4 tablespoons cornstarch
1/2
cup flour
pinch salt
pinch
nutmeg
16 each large shrimp
-- peeled and deveined
enough
canola oil
In a large saucier pan heat 2 inches of oil to 310.
Whip egg whites to soft peaks.
Thoroughly mix all ingredients
minus egg whites.
Fold in egg whites.
Dip shrimp into batter to coat and gentle place in oil.
Fry an minute or two
and turn.
Fry another minute or two until golden.
Remove from oil and drain.
