Yellow Watermelon Gazpacho
1/2 small yellow watermelon -- chopped
1 medium sweet onions -- chopped
2
medium yellow bell pepper -- chopped
2
each yellow beefsteak tomatoes -- seeded and chopped
1 each jalapeno -- minced
1/2 each english cucumber -- peeled and chopped
1 cup midori
1/4 cup galliano
3/4 cup
rice wine vinegar
2 teaspoons salt
1/2 teaspoon pepper
1/2 cup
olive oil
1/4 cup mint -- chiffonade
Mix ingredients minus mint and let mellow an hour.
Puree ingredients in a food processor.
Adjust seasonings.
Garnish
with thinly sliced cucumber and mint chiffonade.

NOTES : a half cup of minced parsley may be added at the end for color and a touch of flavor.
