This makes a LOT of rice but I really like Sushi!

4 cups
rice -- sushi
4 quarts water
1/2 cup mirin
1/2 cup
rice wine vinegar
1/2 cup sugar
2 teaspoons salt
Bring water to a boil.
Rinse the rice under hot tap water until it runs clearish.
Stir into water and boil until
done. about 25 minutes.
Strain and transfer to a large bowl.
Mix mirin, vinegar, sugar and salt and pour over hot rice.
Gently
stir with a paddle until cooled slightly and most moisture is absorbed.
Cool in fridge then use or cover.
