Smoked Trout Crab Cakes

  Amount  Measure       Ingredient -- Preparation Method

   4      each          trout fillet -- 4 ounces each
     1/2  cup           mayonnaise
   2      teaspoons     capers
   1      teaspoon      garlic -- minced
   2      teaspoons     red onion -- brunoise
   3      dashes        worcestershire sauce
   4      dashes        tabasco sauce
   1      each          egg
   1      tablespoon    lemon juice
     1/2  teaspoon      chili powder
     1/2  teaspoon      coriander
   4 1/4  cups          panko

Using apple wood, smoke the  trout filets in a stove top smoker until barely done, like 6 minutes.
Then cool.
Mix other ingredients minus 4 cups panko and fold in cooked trout.
May take a little more panko to get the right consitancy.
Drop by the tablespoon into panko bread crumbs and form into patties.
Fry in about a half inch of canola oil.

NOTES : I also do this recipe by dredging the patties in flour then frying without more panko.
