This is a special Taster Menu I have developed for Saturday, May 17th 2003.

Spicy Pickled Fiddlehead Ferns and Ramps
(try them in a Martini)

Maple Smoked Rainbow Trout, Fiddlehead Fern, Ramps and Sweet Red Bell Pepper with Sushi Rice Rolled in Nori
 
Escargot Vol au Vent
with a Brandied Sweet Corn and Fiddlehead Fern Butter Sauce
 
Sauteed Prince Edward Island Mussels
Sauteed with Fiddlehead Ferns, Fennel, Ramps and Fresh Tomatoes
 
Salad of Fresh Picked Wild Greens
with a Honey Citrus Vinaigrette, Curried Fiddlehead Ferns, and Wild Bee Pollen
 
Pan Seared Diver Scallops
Braised in Sweet Butter with Fiddlehead Ferns, Lime and Bitters
